White Chocolate, Cranberry and Macadamia Cookies

This year I have been asked by a couple of my friends to bake them their Christmas presents, so have been brainstorming fun, festive recipes. These cookies are fantastically easy to make and are guaranteed to go down a treat! The Macadamia nuts give the cookies a delicious crunch, that goes brilliantly with the sourness of the cranberries and sweetness of the white chocolate. This recipe makes 12 large cookies or can be frozen just before baking and cooked at a later date. 

You will need:

225g plain flour
100g caster sugar
125g light brown sugar
125g unsalted butter, softened
250g white chocolate, cut into chunks
1 1/2 tsp baking powder
50g macadamia nuts
50g dried cranberries
1 large egg
1tsp vanilla extract
pinch of salt

Preheat the oven to 200 degrees/gas 6 and line a large baking tray with greaseproof paper. Cream together the butter and sugars in a large mixing bowl.

Add the egg and vanilla and stir until the mixture goes from looking curdled to being nice and smooth. 

Add the flour, baking powder and salt and mix until properly combined.

Add the macadamia nuts, cranberries and chocolate and spread evenly throughout the mixture.

Shape the mixture into 12 balls and place on the baking sheet.

Place in the oven and cook for 10-15 minutes (watch closely as these crisp up very quickly). Remove from the oven and leave to cool on a wired rack (bear in mind that these are that bit more delicious sampled hot!!)
