'Healthy' Avocado Brownies

I have been wanting to try these for a while so I used my sister's birthday as the perfect opportunity to give them a go. It's fair to say they went down a real treat! I came across this recipe on the Mess Makes Food blog. The idea was that you use mashed up avocado instead of butter and ground almonds instead of flour. The avocado keeps them really moist and the almonds give them a delicious nutty texture. Technically the avocado and almonds make them healthy brownies. Well...not really, but they definitely are healthier than your usual brownie! There is no hint of avocado, but instead, they taste deliciously rich and chocolately but not too overwhelmingly sweet. I would definitely suggest giving these a go to satisfy your sweet tooth without so much guilt! 



Makes 16 brownies

You will need:

200g good quality 90% dark chocolate
4 eggs
200g caster sugar
60g cocoa powder
100g ground almonds
2tsp vanilla
2 ripe avocados, mashed



Begin by preheating the oven to 180 degrees/ gas 4. Use a ban marie to melt the chocolate and then leave to one side to cool. 




In a large mixing bowl or food processor whisk together the eggs and sugar until the mixture has doubled in size and is light and fluffy. 





Slowly add in the melted chocolate, scraping the sides with a spatula to ensure that everything is properly incorporated. 





Sift in the cocoa as well as the ground almonds and vanilla. Make sure that the avocado is well mashed and has a smooth consistency then fold into the chocolate mix. Use the spatula to wipe down the sides of the bowl, ensuring that all of the ingredients are evenly distributed throughout the mixture. 




Line a baking tin with greaseproof paper and spoon in the mixture, smoothing the top over with a spatula. 




Bake in the oven for 20 - 25 minutes (when a toothpick comes out clean it is baked). Leave to cool then cut into squares. Enjoy!
