Homemade Almond Butter

Almond butter is a perfect accompaniment to toast, oat cakes and porridge, plus it makes a really useful ingredient in vegan baking (try these Almond, Peanut and Sesame Cookies). It is stuffed full of protein, vitamin E and fatty acids, so is amazing for your health. Homemade almond butter takes only a few minutes to prepare and stores well for a few weeks. I find it a lot more satisfying making my own batch if I have the time, because then you can have complete control over the flavour and consistency. 

You will need:

450g whole almonds
1/2 tsp sea salt

Preheat the oven to 180 degrees/ gas 4. Pour the almonds onto a baking tray and bake for 15 minutes until nicely golden and aromatic. 

Pour into a food processor and blend until they have become fine crumbs. Use a spatula to scrape around all of the sides and turn the blender back on. 

Blitz for a few more minutes until the crumbs have become a paste. 

Pour into a container and enjoy!
