Coconut and Chia Seed Breakfast Pudding

I like to call this a pudding, but realistically it is more of a yoghurt (minus the dairy). It is such an easy dish to make, tastes really good and has the added bonus of being great for your health! The chia seeds are rich in omega fatty acids, protein, iron and antioxidants. Coconut milk is great for you also (as long as you buy one that is free from any stabilising gum). It helps to keep your immune system strong, maintain a healthy heart and is fantastic for your skin and hair. Maple syrup is a delicious natural sweetener that keeps your heart healthy too. So, having one of these little puddings for breakfast is going to provide you with a great start to your day! 

Serves 4

You will need:

400g coconut milk
50g dessicated coconut
2 tbsp chia seeds
1 vanilla pod
1 tbsp maple syrup

Place the vanilla pod and coconut milk in a saucepan and bring to a simmer. Gently heat for 10 minutes to allow to infuse. 

Once cooled, scrape the beans out of the vanilla pod and mix into the milk. Then, stir the chia seeds, maple syrup and coconut into the mixture and divide between four small ramekins. Place in the fridge for 2 hours to allow the chia seeds to plump up. Serve with fresh fruit and enjoy!
