Almond, Peanut and Sesame Cookies

There is something about the combination of almonds, peanuts and sesame seeds that is just magical and makes the most deliciously indulgent cookies. These are gluten free, but you can easily use a normal wheat flour if you would prefer. The cookies are actually pretty good for you. The almond butter and sesame seeds contain lots of beneficial nutrients, minerals and antioxidants. The flour is easy to digest because it has no gluten and the maple syrup replaces white sugar and is full of antioxidants that can reduce your chances of heart disease. This recipe makes 16 little bite-sized cookies that will settle any sugar cravings. They freeze well and you can easily double up the recipe. 



Makes 16

You will need:
2 tbsp almond butter
2 tbsp peanut butter
3 tbsp maple syrup
2 tbsp gluten-free flour
2 tbsp tahini
1 tsp vanilla extract
1/4 tsp salt
2 tbsp sesame seeds



Preheat the oven to 180 degrees/ gas 4. Add the almond butter, maple syrup, flour, tahini, vanilla and salt to a food processor. Blitz until a dough forms. 




Divide the dough into sixteen and shape into rounds. Dip the tops in the sesame seeds and place on a lightly floured baking tray. Bake for 5-10 minutes, until nice and golden. Serve and enjoy!
