Grilled Spiced Aubergines with Yoghurt, Pomegranate Seeds and Rose Syrup

This is such an easy and satisfying salad to make that is just perfect for this time of year. The combination of the savoury aubergine and yoghurt with the sweet rose syrup and pomegranate seeds creates a really amazing flavour sensation. The sweetness of the rose syrup and pomegranate seeds counteracts the spice from the aubergines, with the yoghurt acting as a further stabiliser against the heat from the spices. Not only does this taste delicious, but all of the colourful ingredients work together to create a really beautiful dish. 




You will need:

12 aubergines
smoked paprika
ground cumin
hot chilli powder
natural yoghurt
rose syrup, to decorate
pomegranate seeds, to decorate
extra virgin olive oil
salt
pepper


Preheat your grill. Slice the aubergines into thick rounds. Brush generously with olive oil and cover with the cumin, paprika and chilli powder. Season with salt and pepper and place under the grill for 10 minutes, or until the aubergines turn golden. Flip over to the other side, brush with oil and season with salt and pepper. Grill for another 10 minutes.

When ready to eat, arrange the aubergine slices on a platter. Drizzle natural yoghurt and rose syrup over the top and sprinkle over some pomegranate seeds. Enjoy!
