Oat and Nut Granola with Dried Cherries and Apricots

This granola is packed full of protein, fibre and essential fats. The coconut oil and honey act as natural sweeteners and are unbelievably good for you. Nothing in this is bad for you, in fact, everything in it is actually really good for you and will leave you feeling energised and ready to start the day! It takes all of 20 minutes to make and is delicious served with yoghurt or almond milk and fresh fruit. 

You will need:
200g oats
150g clear honey
100g coconut oil
100g flaked almonds
50g ground almonds
50g toasted hazelnuts, roughly chopped
30g dried cherries
30g dried apricots, roughly chopped 
3 tbsp brown linseeds
2 tsp sesame seeds

Preheat the oven to 180/ gas 4. In a small saucepan, bring the honey and coconut oil to the boil. Place the rest of the ingredients into a large mixing bowl and pour the hot honey and coconut oil over. Stir well so that everything is well covered. Place on a baking tray that has been lined with greaseproof paper and bake for 10-15 minutes, just until the top becomes all lovely and golden. Remove from the oven, mix the granola a little and then leave to cool. Enjoy!
