Spiced Sweet Potato Fries with Avocado Pesto Dip

These are a delicious and guilt free snack that are perfect served with a homemade avocado pesto.  Sweet potatoes are a really healthy substitute for potatoes, as they are packed full of fibre and contain vitamin E which helps protect against heart disease. The coconut oil is great at lowering cholesterol, so is a really good alternative to other oils, adding a delicious subtle hint of coconut to the fries. The paprika and chilli powder give the fries a good kick, however the avocado pesto helps to cool things off. 



 Serves 4

 You will need:
4 sweet potatoes
2 tsp smoked paprika
1 tsp chilli powder
2 tbsp coconut oil
2 ripe avocados
1 lemon, juiced
85g walnuts, roasted
2 large handfuls fresh basil
salt 
pepper

 Preheat the oven to 225 degrees/ gas 7. Peel the potatoes and chop into thin slices. Heat the coconut oil on a baking tray in the oven for 5 minutes, until melted and very hot. Add the potato slices to the tray with the spices and plenty of seasoning. Stir well to ensure they are well coated. Bake for 10 minutes then turn the potatoes and bake for a further 5 minutes. 

In the meantime, make the pesto. Add the walnuts, avocado, basil, lemon juice and seasoning to a food processor and blend to a smooth paste. Serve and enjoy!
