Coconut Chocolate Biscuits

I've been interested in trying out coconut sugar for quite a while now. It offers more vitamins and minerals than white sugar, so is more nutritional than your conventional caster sugar. This recipe could not be more simple, and the great thing about these biscuits is that all of the ingredients have some nutritional benefit for you. It makes the most deliciously chocolatey and indulgent biscuits that have a subtle hint of coconut. You'll find it hard to limit yourself one! 



 Makes 16

You will need:

100g coconut sugar
100g coconut oil
150g buckwheat flour
50g cocoa powder
1 egg
1 tbsp maple syrup
1 tsp vanilla extract
1 pinch salt


Preheat the oven to 180 degrees/ gas 4.  Place the coconut oil and sugar into a food processor and blend together. Add the egg, vanilla and maple syrup and blitz together. Pour in the cocoa, flour and salt and blend until a soft dough forms. Spoon onto a piece of clingfilm and leave to chill in the fridge for 1 hour. 



Roll out the dough on a floured counter until around an inch thick. Cut out 16 shapes and place on a lightly floured baking tray. 




Bake for 5-8 minutes, just until the edges are firm and the middles are still slightly soft. Leave to cool for a few minutes then enjoy!
