Overnight 'Carrot Cake' Oatmeal

Now, I know what you're all thinking...this sounds like a bizarre concept. But you know what, it really works! This is an incredibly speedy yet healthy breakfast. You simply put all of the ingredients into a bowl, cover and leave overnight in the fridge. In the morning, the oats will have soaked up all of the goodness, and you get to enjoy some delicious raw oatmeal. I decided to give the oatmeal a twist by using carrot cake inspired ingredients, such as the cinnamon, grated carrot and sweet honey. Eating this feels almost indulgent, yet it is incredibly nutritious and substantial, providing you with an amazing start to your day. Enjoy!

Serves 1

 You will need:
1/3 cup oats
1/2 cup coconut/almond milk
1 tsp chia seeds
1/2 tsp vanilla extract
1 tsp honey/maple syrup
1 carrot, grated
handful walnuts, chopped
