Spinach, Farro and Sweet Potato Burger with a Walnut Crust

This is a healthy vegan alternative to eating a meat burger that will leave you feeling satisfied and full, but not sluggish. All of the ingredients are really beneficial for your health. The sweet potato is high in antioxidant and anti-inflammatory nutrients, the farro is full of fiber and the walnuts are a great source of omega 3 and vitamin E. Pretty good, eh! I love to serve this with avocado pesto and tahini on top and a ripe cherry tomato and basil oil salad.




Makes 6 burgers

You will need:
150g uncooked farro
3 large sweet potatoes
1 lemon, zested and juiced
1 large handful spinach, finely chopped
large handful coriander, finely chopped
1 garlic clove, crushed
1 tsp ground coriander
1 1/2 tsp ground cumin
170g walnuts, roasted
salt
pepper


Preheat your oven to 200 degrees/ gas 6. Bake the sweet potatoes for 45 minutes, until a skewer goes through the middle with no resistance. Whilst the potatoes are cooking, make the farro according to package instructions. Drain and place in a large mixing bowl. Peel the skin off the potatoes and add the delicious flesh to the mixing bowl, along with the lemon zest and juice, spinach, coriander, garlic and spices. Season really well with salt and pepper, tasting regularly to check there is enough (the salt really helps to bring out the flavour of the lemon and coriander).




Mix everything well and shape into five large patties (they are quite soft, so be careful when handling them). Finely chop the walnuts then gently press the base and top of each pattie over the nuts to give them a walnut crust (I didn't chop mine fine enough, so, in hindsight would recommend them being finely chopped). Refrigerate for an hour.




Heat the oven to 180 degrees/ gas 4. Place the patties on a wired rack and bake for 15 minutes until nicely crisp. Alternatively, you can fry them in a bit of coconut oil which works really well with lemon and coriander flavours. They take 1-2 minutes each side and you have to be really careful not to burn the walnuts!
