Triple Chocolate Brownies

Seeing as it is National Chocolate Week, it would be pretty crazy not to post a recipe containing one of my very favourite ingredients. Ah chocolate...so good, but yet so bad. These brownies definitely do not make the 'good for you category', but boy are they tasty! I've experimented a lot with Brownie recipes over the years... making Salted Chocolate Brownie Biscuits, Avocado Brownies and the unforgettable Slutty Brownies, but these are absolutely my favourite. As you can see...Rupert was interested in them too! The soft brown sugar gives them an amazing gooeyness and the not one, not two, but THREE instalments of chocolate as well as the addition of cocoa makes these brownies incredibly rich an indulgent. These are a total winner in my eyes and will leave you coming back and back and back for more! 



You will need:

250g spelt flour
250g butter
400g soft brown sugar
150g dark chocolate
3 eggs
1 tsp baking powder
60g cocoa powder
100g milk chocolate
100g white chocolate
1 tsp vanilla
sea salt

Preheat the oven to 220 degrees/ gas 7. In a large mixing bowl, cream together the butter and sugar. Then, mix in the eggs and vanilla. Stir until well combined. Melt the dark chocolate over a bain-marie and stir into the egg mixture. 



Add in the flour, baking powder and cocoa. Roughly chop the milk and white chocolate and add into the mixture, stirring well to distribute the chocolate evenly. Pour into a greased and lined swiss roll tin. 




Bake for 25-35 minutes, until a skewer comes out clean. Leave to cool on a wired rack then cut into slices. Serve and enjoy!
