Healthy Black Bean, Banana and Cacao Brownies

These brownies are absolutely delicious, and wait for it...they are actually good for you! Yup, I said it. Tasty chocolate brownies that are good for you. Who would have thought it was possible! I have made many brownie recipes in my time, Triple Chocolate Brownie, Gooey BrowniesSalted Chocolate Brownie BiscuitsAvocado Brownies and the unforgettable Slutty Brownies. And these are definitely my favourite healthy brownie recipe. These yummy little squares contain delicious natural ingredients; black beans, dark chocolate, banana, raw cacao, vanilla extract and maple syrup. The key here is to buy the highest quality ingredients in order to get the best result. The black beans and banana keep the brownies really moist, the cacao and dark chocolate give the brownies a really rich flavour and the hazelnut adds a delightful crunch. These are gluten-free and will last for 2-3 days in a airtight container.  

Makes 14-16

You will need:

1 tin black beans, drained and rinsed
2 eggs
2 ripe bananas
125g dark 70% chocolate, melted
2 heaped tbsp raw cacao
2 tbsp maple syrup
1 heaped tsp baking powder
1 heaped tsp bicarbonate of soda
1 tsp vanilla extract
pinch of salt
large handful of hazelnuts, roasted and chopped

Preheat the oven to 200 degrees/ gas 6. Place the bananas on a tray and bake for 15 minutes. Remove from the oven and leave to cool. Turn the oven down to 180 degrees/ gas 4. 

In a large bowl, mash the black beans to a smooth paste, then mix in the remaining ingredients, minus the bananas. Once they have cooled, mash the bananas and then fold into the other ingredients.

Pour into a greased and lined baking tin. Sprinkle over the hazelnuts and bake for 30 minutes, until a skewer comes out clean.

Leave to cool, then cut and serve!
