Cashew, Date and Cacao Energy Balls

My sister has a very serious allergy to cashews, so I rarely have them in the house. I think the fact that they have been forbidden for so long is part of what makes me love them so much...I know I know, I'm a horrible person!  It's not often that I'm able to enjoy them, so whenever she is out of town I take advantage! These energy balls are a fantastic snack for when you fancy something indulgent, minus the guilty conscience. They only have four ingredients, but each offers amazing health benefits. Dates are high in fibre and potassium, helping to regulate blood sugar and cholesterol. Cashews are rich in magnesium and help to maintain strong bones. Raw cacao is high in antioxidants which help support cardiovascular health. The vanilla is also packed full of antioxidants, is anti-inflammatory and can lower cholesterol. These little treats store really well in an airtight container...that is if there are any leftover for later! 




Makes 16-20

You will need:

150g cashews, roasted
300g medjool dates, pitted
2 tbsp raw cacao
1 tsp vanilla extract

Begin by blitzing the cashew in a food processor until they resemble chunky breadcrumbs. Then, add in the dates, cacao and vanilla and blitz until everything comes together. Line a baking sheet with greaseproof paper. Roll out 20 energy balls and then store in an airtight container. Enjoy!
