Frosted Brownie Cookies

Have you ever wondered if you could cross a brownie with a cookie? Well...you can. These brownie cookies are deliciously crisp on the outside but oh so gooey and chewy on the inside. The dusting of icing sugar gives the cookies a little extra sweetness (I mean, it always helps) and adds a festive touch. They are ridiculously easy to make, taste like a dream and make perfect holiday gifts. Give them a try and see if you could resist them enough to give them to friends and family as holiday gifts!




Makes 12

You will need:
150g light brown sugar
110g butter
200g plain flour
30g cocoa
1 egg
1 tsp vanilla
1/2 tsp baking powder


Cream together the butter and the sugar. Add in the egg and vanilla and stir until well combined. Then stir in the flour, cocoa and baking powder until a smooth batter forms. Leave in the fridge for at least 2 hours to firm up. Then, form into 12 balls and place on a generously floured baking tray. 




 Bake for 10 minutes, until all lovely and cracked. Remove from the oven and place on a wired rack to cool for a few minutes. Once cooled, generously dust with icing sugar. Serve and enjoy!
