Potato, Sausage and Kale Soup

With all of this chilly weather at the moment, I am craving warming, comforting meals. This is a deliciously hearty, flavoursome and satisfying soup that is stuffed full of goodness. The potatoes give it a silky smooth texture, with the sausage and kale adding a lovely bite. 




Serves 6-8

You will need:
3 large potatoes (I used Mozart)
1 onion
2 garlic cloves
500ml chicken stock
500ml water
6 sausages
100g cavallo nero/ kale
pinch of chilli flakes
olive oil
salt
pepper


Preheat the oven to 220 degrees/ gas 7. Place the sausages on a baking tray and cook until nicely golden and crisp. Once cooked, slice into thick rounds. 

Whilst the sausages are cooking, roughly chop the potatoes, onion and garlic. Place in a large saucepan with the stock, water and plenty of seasoning. Place over a high heat, bring to the boil and then simmer for 15 minutes. 



In the meantime, finely slice the kale or cavallo nero and place on a baking tray. Drizzle some olive oil over with the chilli flakes and some salt. Bake in the oven for 10 minutes until really nice and crisp. 

Once the potato is cooked, place the soup into a standing blender and blitz until smooth. Pour back into the saucepan and add in the sliced sausages. Serve up into bowls and top with a handful of crispy kale. Enjoy!
