Banana and Maple Spelt Scones

Scones are one of my great loves. I could just eat them all day everyday. These guys are a slightly healthier version. They have the basic scone ingredients, minus the processed sugar and dairy, so the emphasis is more on making the ingredients as nutritious as possible. The baked banana and maple syrup act as natural sweeteners and are packed full of potassium and calcium, whilst the spelt flour is a fantastic alternative to plain flour as it is a lot easier to digest. These are so quick and easy to make, with the real challenge being limiting yourself to just one...

 Makes 10 -12

You will need:

375g spelt flour
85g butter, cubed and chilled
1 egg
2 bananas
50g maple syrup
1 tsp baking powder

Preheat the oven to 220 degrees/ gas 7. Place the bananas on a baking tray and cook for 20 minutes, until aromatic softened. Leave to cool slightly.  

Then, add mash the banana in a mixing bowl and add in the egg and maple syrup. Stir together until everything is incorporated.  Leave to one side. 

Pour the flour and baking powder into a large mixing bowl and rub in the butter until the mixture resembled breadcrumbs. Make a well in the centre of the flour and pour in the egg mixture. Mix together with a spoon until a soft dough forms. 

Turn out onto a floured work surface and gently pat the mixture out to your desired thickness. Slice into triangles and place on floured baking trays. 

Place in the oven for 10-15 minutes, until nice and golden. Serve straight from the oven with a bit of butter. Enjoy!
