Oat, Banana and Dark Chocolate Spelt Cookies
Cookies are one of my biggest weaknesses. They are my go to whenever I need a quick sugar fix. However, I will openly admit that I hold very high cookie expectations. They have to be crisp and crunchy on the outside whilst gooey and indulgent on the inside. I can confirm that these guys totally meet these requirements. The banana keeps them really moist and gooey, the oats and spelt give them a delicious nuttiness and the dark chocolate goes amazingly with the ginger. These guys are so quick and easy to make, have more nutritional goodness than your average cookie and are just deeeeeelicious! They are so good served fresh from the oven or you can freeze them just before or after baking.
You will need:
125g butter, softened
225g light brown sugar
200g dark chocolate
200g dark chocolate
100g oats
275g spelt flour
2 ripe bananas, mashed
1 egg
1 tsp vanilla extract
1 tsp ground ginger
1 tsp baking powder
1 tsp baking powder
1 pinch salt
Preheat the oven to 220 degrees/ gas 7. Cream the butter and sugar in a mixing bowl. Add in the vanilla, egg, ginger and bananas and stir until everything is well combined.
Add in the salt, baking powder, flour and oats. Stir until the mixture comes together and then mix in the chocolate.
Line two baking sheets with greaseproof paper and use an ice cream scoop to spoon the mixture onto the sheets. Bake for 10-12 minutes until lovely and golden. Leave to cool for a minute then serve and enjoy!
