Rib Eye Steak with a Salsa Dressing

I love steak. I love salsa. Bring the two together and it is just a magical combination. This is my go-to Salsa recipe, and is so versatile. It is delicious served on its own as a salad in the summer, as a dip or added as a topping for soups...the list just goes on!  However, salsa served on top of steak is a new favourite of mine. This is such a colourful, quick and healthy dish, with the tomatoes and steak giving you a fantastic hit of iron that will leave you feeling totally energised. 




You will need:

1 rib eye steak
400g cherry tomatoes
1 red chilli
1 lime, juiced
large handful coriander 
2 tbsp olive oil
1 tsp maple syrup
salt and pepper



Begin by marinading your steak with some olive oil, salt and pepper for at least 15 minutes. Heat your skillet until it is piping hot. I usually cook my steak for 3-4 minutes each side for medium-rare. Remove from the pan, place on a plate and cover with foil. Leave to rest whilst you make the salsa.

Finely chop the tomatoes, chilli and coriander. Add to a mixing bowl with the oil, lime juice and maple syrup. Season to taste. Serve on top of the steak and enjoy!
