Pecan and Almond Granola

Granola is one of my favourite breakfasts. Making it from scratch couldn't be easier and is a lot better for you than the shop bought stuff that is packed full of sugar and preservatives. This is my favourite recipe for Granola - it has just the right amount of sweetness and is substantial, keeping me going all the way until lunchtime! I love the combination of the almonds and pecans with maple syrup, as it gives the Granola a really delicious depth of flavour. This recipe is so quick to make, tastes absolutely delicious and is packed full of goodness. Simply serve with some fresh fruit and yoghurt and let the Granola do the talking! 

Serves 6 

You will need:

150g almonds, blanched
150g pecans
150g oats
50g coconut oil
50g maple syrup
1 tsp vanilla extract
1 tsp ground ginger
1 pinch sea salt

 Preheat the oven to 200 degrees/ gas 4. Place the almonds and pecans on a baking tray and cook for 8-10 minutes, until golden and aromatic. Remove from the oven and leave to cool.

Then, add the nuts into a food processor and blitz until roughly chopped (you can do this by hand). Melt the coconut oil and then add into the nuts with the maple syrup, ginger, vanilla and salt. Pulse a few times just so everything is well combined. Pour a mixture into a large mixing bowl and fold in the oats by hand.

Line a baking sheet with greaseproof paper and pour the mixture onto it. Bake the granola for 10-15 minutes until golden and aromatic. Serve and enjoy!
