Dark Chocolate Chip Cookies

This is my go-to cookie recipe. I've been making these for years and trust me when I say they are an absolute crowd pleaser. They are so ridiculously easy to make and the end result is a cookie that is slightly crisp on the outside yet soft and crumbly on the inside. 

Makes 10 cookies

You will need:

125g salted butter
125g light brown sugar
225g plain flour
1 tsp baking powder
1 egg
1 tsp vanilla extract
150g dark chocolate, cut into chunks

Preheat the oven to 200 degrees / gas 6. Cream together the butter and sugar until light and fluffy. Add in eggs and vanilla, then beat until combined. Add in the flour and baking powder and mix until everything is well combined. Mix through the dark chocolate.

Form the dough into 10 balls. Place on two baking sheets and bake for 10-12 minutes, until lightly golden. Leave to cool slightly then serve and enjoy!
