Homemade Fried Gnocchi with Lemon and Sage

Homemade Gnocchi is so quick and easy to make. With only three ingredients - eggs, flour and potatoes - all of which are cupboard staples, there's no excuse to not try out this recipe at least once! My favourite way to cook Gnocchi is to fry it which leaves the inside all delicious and doughy, whilst the outside gets a good crust. Sage and butter are the perfect accompaniment to crispy Gnocchi, combined with parmesan and lemon and you have yourself one pretty tasty meal!





Serves 4-6

You will need:

500g potato (I used Desiree), peeled and roughly chopped
250g plain flour
2 eggs
2 tbsp butter
10 Sage leaves
2 lemons, juiced
Parmesan
salt and pepper


Begin by placing the potatoes in a saucepan of boiling water with a pinch of salt. Boil for 10-15 minutes until just cooked. Drain and rinse with cold water.

Place in a food mixer or food processor, or alternatively a mixing bowl. Grate the potatoes into the mixing bowl. Add in the eggs and flour and then mix over a low speed until everything is well combined.

Turn the dough out onto a well floured work surface and divide the dough into 4 pieces. I prefer Gnocchi pieces to be quite small, so I roll each piece of dough into a long cylinders and chop into 2 inch pieces.

Add the gnocchi into a pan of boiling water and cook for around 2 minutes, or until the gnocchi rises to the surface then drain. Melt the butter in a frying pan over a medium heat then add in the gnocchi with salt and pepper. Cook for a minute or so per side until crispy then add the lemon juice and sage to the pan. Fry for a further minute.

Plate up and generously cover with grated Parmesan. Enjoy!
