Apple and Pear Crumble with a Spelt, Oat and Pecan Crust

This is a great crumble recipe that I have been using a lot recently. It's super quick and easy to make, and the combination of spelt, oats and pecans in the topping gives it a really delicious nutty flavour. This recipe is great all year round and perfect served with fresh custard or a dollop of ice cream.  

Serves 4-6

You will need:

150g spelt flour
50g oats
100g butter, chilled and diced
125g light brown sugar
1 tsp baking powder
50g pecans, roughly chopped
2 large pears, diced
2 large apples, diced
1 lemon, zest and juice
1/2 tsp ground ginger
1 tbsp milk

Preheat the oven to 180 degrees / gas 4. Begin by placing the pear and apple piece with the lemon and ginger in a saucepan with a lid on and simmer for 5 minutes until the fruit begins to soften. Remove from the heat and pour into your crumble dish.

In a large mixing bowl, add in the flour, oats, pecans, sugar, baking powder and salt and mix well. Rub the butter into the flour mixture until it starts to resemble breadcrumbs. Mix in the milk so that the topping starts to come together in large chunks. Pour over the apple and pear filling and then bake for 35 - 40 minutes until golden. Serve and enjoy!
