Triple Choc Chip Cookies

You may know now that I have a slight obsession with cookies (...slight is probably a bit of an understatement). These triple chocolate chip cookies are my newest invention - a happy hybrid between a rich brownie and a dense cookie...just amazing! Warning though... they are extremely moorish!



Makes 6 large / 10 small cookies 

You will need:

125g butter softened
125g light brown sugar
200g plain flour
30g cocoa powder
1 tsp baking powder
1 egg
1 tsp vanilla extract
50g milk chocolate, roughly chopped
20g white chocolate, roughly chopped
1/2 tsp salt


Preheat the oven to 200 degrees / gas 6. Cream together the butter and sugar until light and fluffy. Add in the egg and vanilla and beat until well combined. Sift in the flour, cocoa and baking powder and mix until well combined, then mix through the chocolate chunks. 

Form into balls and place on a lined baking sheet. Bake for 10 minutes then remove from the oven and leave for 5 minutes to cool slightly. Serve and enjoy!
