Summer Pea, Broccoli, Couscous and Feta Salad with Sunflower Seeds

This salad is my take on Leon's delicious Superfood Salad. It's so quick and easy to make and absolutely packed full of colourful and nutritious ingredients. It's a fantastic salad to have at this time of year with the peas, coriander and broccoli adding great colour and flavour. The feta gives the salad a delicious sharpness and is complimented really well by the light citrus dressing. The seeds add fantastic crunch and there is only a very small amount of couscous in the salad, helping to keep it really light and fresh.  


Serves 4

You will need:

2 broccoli heads, chopped into pieces
350g garden peas, raw
100g couscous
25g flat leaf parsley, finely chopped
10g mint, finely chopped
50g sunflower seeds, toasted
50g feta cheese
1 tsp french mustard
4 tbsp olive oil
1 lemon, juiced
1.5 tbsp vinegar (I used pomegranate, but cider works well also)
salt and pepper


Begin by boiling the broccoli heads in a large pan of salted boiling water for 3 minutes, until just cooked through, as you want them to retain a bit of bite. Drain and leave to cool in a large bowl of iced water. Cook your couscous according to package instructions and leave to cool. 

In the meantime, add the garden peas, parsley, mint and sunflower seeds into a large mixing bowl. Add in the broccoli, couscous and feta and gently stir with your hands until everything is well mixed. In a small bowl whisk together the oil, mustard, lemon and vinegar with salt and pepper to taste. Drizzle over the vegetables and gently mix to combine well. Serve and enjoy!
