Milk Chocolate and Maple Nutmeg Cookies

This is my go-to cookie recipe. I make them all year round and they're a guaranteed crowd pleaser. Slightly crisp on the outside but gooey and cakey on the inside - yum! These guys are so incredibly easy to make, taking all of 15 minutes and always seem to go down very well (not to mention quickly) in our household! The hint of nutmeg is key, complimenting the chocolate really well and adding great depth of flavour. 


Makes 6 large / 10 small cookies

You will need:

125g butter, softened
125g light brown sugar
225g plain flour
1 egg
2 tbsp maple syrup
1 tsp vanilla extract
100g milk chocolate, roughly chopped 
1 tsp baking powder
1/2 tsp salt 

Begin by preheating your oven to 200 degrees / gas 6. Cream together the butter and sugar until light and fluffy. Add in the egg and vanilla and beat until well combined. Sift in the flour, baking powder and salt and mix. Then mix through the chocolate chunks. 

Shape into balls and place on a lined baking sheet. Bake for 10 minutes then remove from the oven and leave to cool for 5 minutes on a wired rack. Enjoy!
