Bonfire Night Honeycomb Cookies

Mighty Fine's honeycomb is quite literally the bees knees. Their product is high quality, they use all natural flavourings and it's totally delicious! They use real honey and this makes a massive difference to the flavour and texture, creating an amazingly crunchy and chewy honeycomb. 

Now whilst I love nothing more than eating the honeycomb on its own, I have recently started baking with it. This cookie recipe is my latest obsession - the cookie has a fudgy, brownie like texture and the honeycomb when baked becomes even more chewy and crisp. 

Makes 10 cookies

You will need:

200g plain flour
2 tbsp cocoa powder
125g soft brown sugar
125g butter, softened
1 tsp vanilla extract
1/2 tsp salt
1 tsp baking powder
1 egg

Begin by preheating the oven to 200 degrees / gas 6. In a large mixing bowl cream together the butter and sugar. Then add in the egg and vanilla, beating until well combined. 

Roughly chop the delicious honeycomb bars into bitesize pieces and leave to one side. Sieve the flour, baking powder, salt and cocoa into the mixing bowl and then add in the honeycomb pieces. Gently fold the mixture until everything is well combined and a dough forms. 

Divide the mixture into 10 small balls and place on two lined baking sheets. Bake for 10 minutes, by which the honeycomb will have become really aromatic and the cookies wrinkled and gooey. Leave to cool for 5 minutes then serve and enjoy!
