Pecan and Rye Brownies

I've dedicated a fair amount of blog time to brownies over the years. You'd think I'd be sick of them by now, but oh how wrong you are. This recipe is my latest recipe for deliciously fudgy, nutty and very very chocolatey brownies. 




You will need:

300g golden caster sugar
200g butter, melted
100g dark chocolate
100g milk chocolate, roughly chopped
100g white chocolate, roughly chopped
100g rye flour
75g plain flour
100g pecans, toasted and roughly chopped
1 tsp vanilla extract
1 tsp baking powder
2 tbsp cocoa powder
2 eggs
1/2 tsp salt

Preheat the oven to 180 degrees / gas 4. Melt the butter and dark chocolate in a small saucepan over a low heat. Once melted, pour into a mixing bowl and stir in the sugar. Then, whisk in the eggs with the vanilla,. Gently fold in the flours, salt, baking powder and chocolate pieces. 

Pour into a greased and lined baking tin and top with the pecans. Place in the oven and bake for 25-30 minutes, until the mixture is slightly springy on the outside, but nice and gooey in the centre. Allow to cool then serve. Enjoy!
