Spiced Harissa and Cocoa Sausage Rolls

These spicy and aromatic sausage rolls are the perfect snack for this time of year. They're very straightforward to make and a real crowd pleaser. The harissa gives them a delicious sweet kick, whilst the cocoa balances out the spice adding richness. 


Makes 12 large sausage rolls 

You will need:

Pastry:
300g plain flour
150g chilled butter
1 egg + 1 for glazing 
2 tbsp water

Filling:
500g sausage meat
1.5 tsp cocoa powder
1 tsp harissa
1.5 tsp five spice
1 tsp mustard 
1 tsp chopped fresh sage
salt + pepper

Begin by making the pastry. In a food processor blitz the flour and butter until the mixture resembles fine breadcrumbs, then add in the egg and water and blitz until the mixture forms a dough. Cover with cling film and leave to chill in the fridge for 30 minutes. 

Then, preheat the oven to 180 degrees / gas 4. In a large mixing bowl add in all of the filling ingredients and mix until well combined. Roll out the pastry into a large rectangle until it is the thickness of a pound coin. Evenly distribute the filling over the pastry and brush one side of the pastry with some of the beaten egg. Fold the other side of the pastry over onto the egg washed edge and seal. 

Gently slice into 12 rolls and place on a lined baking tray. Chill for 20 minutes then brush with the remaining egg wash. Bake for 20 minutes until lovely and golden. Serve and enjoy!
