Vegan Coconut Chocolate Cookies

Have you ever thought of making cookies, but then realised you are missing the two very vital ingredients (eggs and butter). Well this happened to me recently, but fear not there is an answer in the shape of these vegan cookies (yay)! The banana replaces egg and acts as the binder, whilst coconut oil replaces the butter, making them 100% vegan and totally delicious. The banana and coconut keep these guys amazingly light, with the chocolate adding richness. These do need to be eaten within a day or two of baking because of the fresh banana, but I would be surprised if people could resist them for more than a day! 

Makes 10 - 12 cookies

You will need:

125g coconut oil, melted
125g golden caster or unrefined cane sugar
2 ripe bananas, mashed
2 tbsp cocoa powder
200g plain flour
1 tsp baking powder
1 tsp vanilla extract
1 pinch salt
100g dark chocolate, cut into chunks

Begin by preheating the oven to 180 degrees / gas 4. In a large mixing bowl stir together the coconut oil, sugar, vanilla and salt. Then, stir in the remaining ingredients and bring the whole mixture together with your hands. Divide into 12 equal balls and place on lined baking trays. Bake for 10 minutes then remove from the oven and leave to cool for a few minutes. Serve and enjoy!
