Coleslaw

Homemade coleslaw tastes a million times better than any of the stuff you can buy in the supermarket and is so simple and quick to make. This colourful coleslaw is my go-to recipe - the celeriac adds amazing flavour and really helps to cut through the richness from the mayonnaise. 



Serves 4-6

You will need:

2 large carrots
1/2 red cabbage
1/2 celeriac
4 tbsp mayonnaise
1 lemon, juiced
2 tsp dijon mustard
1/2 tsp salt
pepper

Begin by grating the carrots, cabbage and celeriac (either using a box grater, or even better, a food processor if you have one!). Place in a large mixing bowl and then add in the remaining ingredients. Stir until everything is really well combined. Leave to chill for a few hours then serve. Enjoy!
