Banana, Peanut Butter and Chocolate Cookies

It is no secret that cookies are a serious vice of mine, and these guys are my latest addiction. The combination of sweet ripe banana, chunky peanut butter, nutty oats with the bitterness of the dark chocolate is divine. They're ridiculously easy to make and will keep for a few days (I like to double the batch and freeze half just before baking so that I always have them to hand!)


Makes 8 large cookies 

You will need:

120g chunky peanut butter
100g light brown sugar
150g oats
100g dark chocolate chips
1 ripe banana, mashed
1/4 tsp freshly grated nutmeg
1 egg
1 tsp baking powder
1 tsp vanilla extract
pinch of salt

Begin by combining the peanut butter, sugar, banana, vanilla and egg in a large mixing bowl and stir until well combined. Add in the oats, baking powder, salt and chocolate chips and mix together to form a dough. Place the mixing bowl in the fridge for 30 minutes to chill.

In the meantime, preheat to oven to 180 degrees / gas 4. Once the dough has chilled, shape into 8 equal sized balls and place onto a lined baking tray. Bake for 10 - 15 minutes until golden. Cool for 5 minutes then serve and enjoy!
