Chocolate, Coconut and Almond Squares

These chocolate and almond squares are my latest obsession. Now, they're not exactly healthy...but they're also not exactly bad for you either. Sounds pretty promising eh! These little bites of heaven are indeed packed full of nutritious and wholesome ingredients, but most importantly deliver on flavour. The combination of the nutty oats with rich almond butter, sweet coconut and delicious sharp chocolate is so good and will leave you going back for more and more! 

You will need:

400g oats
50g desiccated coconut
1/2 tsp salt
250g almond butter (roughly 4 heaped tbsp)
50g honey (roughly 2 tbsp)
150g coconut oil (roughly 4 heaped tbsp)
200g dark chocolate 

Begin by blitzing the oats, coconut and salt in a food processor until a fine flour forms. In the meantime melt the almond butter, honey and coconut oil in a small saucepan until liquid and well combined. Pour the mixture into your food processor and blitz with the flour mixture until a dough forms. 

Pour the dough into a small lined baking tray and then press down with the back of a spoon into all of the corners until level and smooth. Melt the chocolate and pour over the top. Gently tap the tin against your work surface a few times to ensure the chocolate layer is neat and smooth. Refrigerate for at an hour, then slice into small bitesize pieces and enjoy!
